Cranberry Walnut Chocolate Chip Cookies

Happy “almost” spring everyone! The sun has been out more, the snow has slowed down (hoping not to jinx myself on this one) and there is an end in sight of winter almost being over!! That said, I was in the mood for some spring cleaning and dug out a bag of frozen whole cranberries from my freezer today, a bag of walnuts from the pantry… and decided to get creative. Here is my recipe for Cranberry Walnut Chocolate Chip cookies, enjoy!

Cranberry Walnut Chocolate Chip Cookies: Makes about 16 cookies


– 1/2 cup butter, softened (you can use coconut oil also)
– 3 tbs sugar
– 3 tbs brown sugar
– 1/2 tsp vanilla
– 1 egg
– 1 cup flour
– 1/2 tsp salt
– 1/2 tsp baking soda
– 1/2 cup fresh (or defrosted) cranberries, chopped
– 1/2 cup raw walnuts
– 1/2 cup mini semi-sweet chocolate chips

1) Preheat oven to 375 degrees
2) Roast chopped walnuts in oven for about 10 minutes
3) While walnuts are roasting, mix together vanilla, sugars, and butter
4) Add egg into wet mixture
5) Add in flour, salt and baking soda until mixed well
6) Fold in cranberries, walnuts and chocolate chips slowly
7) Spoon a medium-sized scoop of batter into balls onto two greased baking sheets
8) Bake for about 10 minutes
