Carrot Apple Spice Bread

I have always been a fan of carrot cake and was so excited to make a spice bread derivative! This bread is excellent with tea, as a light and sweet dessert πŸ™‚

– 1 1/2 cups flour
– 1 1/2 cups shredded carrots
– 1/3 cup shredded apples (or all natural applesauce with no added sweetener)
– 1/4 cup brown sugar
– 2 eggs
– 2 tbs oil (coconut or canola)
– 2 tsp cinnamon
– 1 tsp vanilla
– 1 1/2 tsp baking powder
– Β pinch of sea salt

1. Preheat oven to 350 degrees.
2. Spray coconut oil onto a 8 x 8 in baking pan.
3. Mix all ingredients together well.
4. Bake for 40 minutes or until toothpick comes out clean from center. Enjoy!

*This spice bread is DELISH with a drizzle of tahini on top πŸ˜‰
