Vegan Peanut Butter Oat Bars


Snowww day!!! Which means I get to spend time at home, baking of course πŸ˜‰ I haven’t had as much time to bake lately as I would like, so when the storm came rolling in today, I was of course excited to “recipe-develop” and experiment! Today I was looking to bake something just slightly sweet, and a nice treat to accompany a cup of tea. I used oat flour as a base and coconut sugar to sweeten. These are both gluten free and vegan! You can add an egg or egg substitute if you would like the ingredients to bind better.

Vegan Peanut Butter Oat BarsΒ 

Ingredients:
–Β 1 cup gluten free oat flour
– 1/2 tsp baking powder
– 1/2 tsp baking soda
– 2 tbs coconut sugar
– 1 tbs chia
– 2 tbs coconut oil
– 1 tsp cinnamon
– 1/4 tsp vanilla
– 1/4 cup crunchy pb
– 2 tbs additional flavor pb (I used Wild Friends sugar cookie peanut butter!)
– 1/2 cup almond milk

Instructions:
1.Β Preheat oven to 350 degrees
2. Whisk together dry ingredients in a medium sized bowl
3. In a separate bowl, mix wet ingredients (can add egg here)
4. Fold in wet ingredients into dry
5. Spray 8 x 8 in pan with coconut oil spray
6. Sprinkle top with a bit more coconut sugar and cinnamon
7. Bake for 10-12 minutes
8. Let cool and drizzle with peanut butter
