Hummus and Beet Hummus Recipes!

Is hummus a food group?? Ha I sure do treat it as one! Hummus is a staple in our household, and I love trying out most forms of hummus, and recently got to experimenting and found a new favorite! And the best part-hummus is quite nutritious! It has good, healthy fats, can lower cholesterol, and even has a decent iron content! Some of my fav hummus “accessories” are: carrot/celery/zucchini/cucumber slices, blue corn tortilla chips, whole grain crackers to name a few. Two recipes here for a traditional hummus passed down from my mom, and a beet hummus that I created πŸ˜‰

Traditional Mediterranean Hummus Recipe:

Ingredients:
– 1/2 cup raw sesame tahini
– 1 tbs smashed garlic paste (if you live in the Denver area I highly recommend my mom’s from Yaffa’s Savory Cafe!)
– 1/4 tsp coarse salt
– 2 tbs extra virgin olive oil
– 1/4 cup water
– 1/2 fresh squeezed lemon
– 1 can well rinsed and drained chickpeas/garbanzo beans

Instructions:Β 
1. Combine all ingredients except for chickpeas in a food processor.
2. Taste to see if you need to add more garlic, or salt. Consistency should be between creamy and watery.
3. Add garbanzo beans and blend until all well combined.
4. Serve with parsley flakes, or parsley, a bit of olive oil, and paprika!

 

Beet Hummus Recipe:

Ingredients:
– 1/2 cup raw sesame tahini
– 1 tbs smashed garlic paste (if you live in the Denver area I highly recommend my mom’s from Yaffa’s Savory Cafe!)
– 1/4 tsp coarse salt
– 2 tbs extra virgin olive oil
– 1/4 cup water
– 1/2 fresh squeezed lemon
– 1 can well rinsed and drained chickpeas/garbanzo beans
– 6 small or 3 larger cooked beets (I prefer lovebeets brand!)

Instructions:Β 
1. Combine all ingredients except for chickpeas, and beets in a food processor.
2. Taste to see if you need to add more garlic, or salt. Consistency should be between creamy and watery.
3. Add garbanzo beans and blend.
4. Then add beets and blend until all well combined. It should be a bright pink color.
5. Serve with parsley flakes,Β or plain!
*for a more beet-y consistency, use half of other ingredients and try adding more beets.
