Easy Baked Mexican Frittata!

One of the easiest and best brunch dishes to make (in my option πŸ˜‰ is a frittata! They go perfect as a main, or part of a multi-item brunch and can be made miniature for sides. Easy, healthy, full of protein and veggies, no wonder it’s one of my faves! Easy recipe here:
Baked Mexican FrittataΒ 

Ingredients:
– 6 eggs
– 1 cup chopped kale
– 1/2 cup salsa
– 1 cup ground protein*
– 1/2 cup shredded sharp cheddar
– oil spray for pan
*I love to use Trader Joe’s “Soyrizo” – it’s vegan and super flavorful! I use about half the package for this recipe, and do not need to add any other seasonings. OR feel free to use any of your favorite protein! Ground turkey, chicken, tofu, etc… and add salt, pepper, andΒ MexicanΒ spice seasoning to taste πŸ™‚Β 

Instructions:
1. Pre heat oven to 350 degrees
2. Spray bottom of a pie dish lightly with oil
3. Line bottom of pie dish with the chopped kale

4. Whisk eggs in a bowl, then add soyrizo and salsa. Mix lightly

5. Pour evenly over kale

6. Sprinkle cheese on top

7. Bake for about 25 minutes
