Japanese Sweet Potato 3 Ways!

Always exploring recipes and using my creativity to create meals with new foods, I am kind of obsessed with the Japanese sweet potato. It is purple on the outside and butter colored on the inside kind of like a traditional potato. It is full of vitamin c, B3, fiber and antioxidants- inside and out! So I brought a few of these beauties home with me and have experimented with 3 recipes; a side dish, a main and a dessert (yes dessert! with sweet potato!)

 

 

#1 Side dish: Kale & Sweet Potato Saute (recipe below)

SUPER easy!
– chop the sweet potato (with skin on) and saute in light olive oil on med-high heat for about 5 min
– add 2 cups chopped kale with salt & pepper
– saute for another 2 min
Voila!
