Slow cooker season!

Ahh, there are fewer simpler pleasures in life than walking into your home after a long day of work with slow cooker smells wafting right at you… drooling yet? haha Well what I love most about slow cookers meals (other than the home smells) is how easy they are to make!

Today was the a perfect example. A long day of work, a long training run, piles of laundry awaited me and the last thing I wanted to worry about was cooking a meal, healthy nonetheless. Lucky for me I knew today was going to be long, so I gathered all the right ingredients last night, and woke up a few minutes early this morning to get my slow cooker going for the day. Boy am I glad good planning was on my side 😉

Today’s recipe: Hearty Veggie and Beef Slow Cooker Stew (can easily be made full veggie, just add more potatoes!)

Ingredients:
– 1 lb beef stew meat
– 3 diced red potatoes
– mirepoix mix (3/4 cup diced carrot, 3/4 cup diced onion, 3/4 cup diced celery)
–  1 tbs fresh or dried parsley
– 1 tsp dried oregano
– 1 tsp dried thyme
– 1 tsp garlic powder
– 2 bay leaves
– drizzle of olive oil
– 4 cups beef broth
– 1/2 can tomato paste
– salt & pepper to taste
– 1 cup brown rice

Instructions:
1. Add all ingredients to crockpot except for rice.
2. Turn crockpot on slowest cook time (mine is 10 hr, low)
3. Add rice in 2 hours before complete.
Voila! Warm, delicious, healthy beef & veggie stew without too much thought! Perfect for a winter day 🙂 Enjoy!
