AB & J cookies :)


So yummy!

So I’m kinda nuts about nut butters, who isn’t? Especially since now there are SO many amazing kinds to choose from! I experimented with a recipe tonight that actually came out pretty awesome so here it is for you to try πŸ˜‰


They came out like this, just a slight indent


Almond Butter & Jelly (AB & J) Thumbprint CookiesΒ 

– 3/4 cup flour of choice (I used all-purpose)
– 1 cup plain almond butter (Justin’s!)
– 1 egg
– 1 tsp baking soda
– 2 tbs oil (I used sunflower seed oil)
– 2 tbs almond milk
– 1/2 cup brown sugar (or you can use 1/4 cup maple syrup)
– dash of cinnamon
– dash of sea salt
– jams or nut butters of choice to top


Step 6. re-indenting the thumbprints


1. Preheat oven to 350 degrees
2. Combine all ingredients except for toppers in kitchen mixer
3. Using a large spoon, shape about 1.5 tbs of mixture into balls, and press your thumb to indent in center
4. Lay out on parchment paper
5. Bake for about 9 minutes
6. Remove from oven, and using a knife, indent again into each cookie
7. Let cool about 15 minutes
8. Top with toppings into indent! I used strawberry jam, apricot jam, wild Maine blueberry jam, and Pumpkin Peanut Butter (Wild Friends!)

Yield about a dozen cookies.
