Chocolaty sweet potato brownies (flourless!) 


As I was craving something Chocolaty last night, but also looking for a way to use up my extra sweet potatoes left over from Hanukkah (creative coincidence?), I decided to experiment with some chocolate brownie recipes- and the results were deee-licious!

Ingredients:
– 3 cups grated sweet potato
– 2 eggs
– 1/3-1/2 cup maple syrup (depending on how sweet you want them, 1/3 cup was lightly sweetened)
– 1/2 cup coconut oil at room temp
– 1/2 cup cacao powder
– 1/4 cup oats (or almond meal/coconut flour to make this paleo!)
– 2 tsp vanilla
– 1 tsp baking powder
– 1 tsp baking soda
– 1/2 cup dark or bittersweet chocolate chips
– 1/4 cup raw shredded coconut

Instructions:

1) Preheat oven to 350 degrees
2) Combine dry ingredients first, then add wet ingredients (except shredded coconut)
3) Mix well, and pour into a lightly oil sprayed 8×8 brownie pan
4) Sprinkle top with more chocolate chips if desired and sprinkle shredded coconut
5) Bake for 25 min
