Fall Apple Crisp (Vegan!)

Β 1st apple recipe of the season here folks! It is super easy, quick and also happens to be vegan πŸ˜‰

For filling, mix the following:
– 3-4 chopped apples (I used cortland & left the skins on, but any tart baking apple will do!)
– 2 tbs fresh squeezed orange juice- 2 tbs fresh squeezed lemon juice
– 1 tsp lemon zest
– 1/4 cup brown sugar
– 1 tbs maple syrup
– 1 tsp cinnamon
– 1/2 tsp nutmeg

For the topping, mix these well:
– 1/4 cup whole wheat flour or almond meal
– 1 cup rolled oats
– 1/4 cup brown sugar
– 1 tsp cinnamon
– 1/3 cup coconut oil (or earth balance)

Directions:
1) Preheat the oven to 350 degrees
2) Pour filling into a baking dish/pie pan
3) Sprinkle topping all over
4) Bake for about 50 minutes or until top is golden brown and bubbling, YUM!
